I love coconut, so I had too much fun incorporating it into my diet today. I usually start off my morning with a glass of lemon water, however it felt all too appropriate to start it with lemon coconut water. I used my Zico coconut water and half of a lemon sliced into it, and paired it with a banana for my pre-workout breakfast. | I also decided to spoil myself a little and I bought an actual coconut from Whole Foods - I enjoyed drinking the coconut milk straight out of the coconut, and it was very sweet! I also stuck a spoon inside and ate some of the coconut meat - I was too afraid of the hammer to open it all the way! I prepared some coconut chia seed pudding for dessert also - I used chia seeds, unsweetened coconut flakes, Zico coconut water, and coconut sugar! Put it all in the fridge to let it set for 30 minutes to an hour. |

I can honestly say that I really am loving the vegan/raw vegan/vegetarian diet (I can't commit to one just yet). I feel like I'm setting a very good base of nutrition to follow up with exercise once my wisdom teeth heal and I can get back into the gym. Nutrition is such an important part of living a healthy life and I feel like I'm really starting to get a grip on that. I used to always put gym first - I would start a workout routine and try to follow that up with good nutrition. Now I've realized that you have to start with nutrition and then add the gym routine. Now I have been eating this vegan/vegetarian/raw vegan/paleo (I know, it's a lot) diet for about two weeks so one more week to make it a habit. I still have some old food to get rid of that I don't want to go to waste (chicken breasts, eggs, etc.) which are relatively healthy but I will try to eliminate along my journey. With the success of my key lime pie bars, I decided to go for a chocolate raw vegan recipe. I made the Oh She Glows: Two-Layer Raw Chocolate Brownies (http://bit.ly/1jEHyr4) and they were incredible. They were devoured by my friends and I that night, and some of my friends are now starting to understand and accept vegan options. My boyfriend called me yesterday and said he found Gluten-Free Vegan Habañero Chips at the store and he bought them because they made him think of me - and he said they were actually delicious and in the same price range as the other chips. It's nice to know that people are willing to try and understand how I choose to eat, but actually enjoying it as well. Now, I know I can't keep making these raw vegan dessert recipes too often because I just can't stop eating them once they're there - they are pretty guilt free, but still not something to be consumed on the regular. I'll just try a new recipe whenever I'm having cravings.
